Teacher’s manual on food quality and
safety finalized
The United Nations Industrial
Development Organization (UNIDO) and the
Tanzania Bureau of Standards (TBS), in
collaboration with the Ministry of
Education and Vocational Training have
finalized the development of a Teacher’s
Manual on Food Quality and Safety for
training of teachers in secondary
schools in Tanzania.
The manual was finalized during the
manual final evaluation workshop for the
pilot introduction of the Teacher’s
Manual on Food Quality and Safety into
secondary schools in Tanzania, which was
held in Morogoro region from 17th-18th
November 2008.

The manual is intended to equip teachers
at secondary school and teachers
colleges level with relevant knowledge
on food quality and safety issues that
will enable them to transfer to their
students the basic rules and best
practices to apply in ensuring food
quality and safety throughout food
production, transportation, handling,
storage to food consumption. The
knowledge will ultimately enhance them
to protect their families’ health from
food borne diseases, contribute to food
security as well as raise awareness on
fair practices in food trade.
The move follows the need to create
awareness on food quality and safety
issues to all stakeholders through
sensitization of the youth, students in
particular, taking into consideration
that they represent the future food
producers and consumers of our nation.
During the opening of the workshop, the
Permanent Secretary in the Ministry of
Education and Vocational Training,
Professor Hamis Dihenga, underscored the
need of mainstreaming food safety issues
and quality into Tanzanian schools and
teachers' colleges curricula and for
rolling down to pre-primary and primary
schools. He further said that the 1948
Universal Declaration of Human Rights
includes the "Right of everyone to have
access to safe and nutritious food" and
as such food quality and safety are
critical elements for both market access
and consumers’ health, he insisted.
Further, the TBS Acting Director Mr.
Leandri Kinabo noted that the manual
complements the current home economics
and biology curricula in Tanzania.
Mr. Kinabo applauded the Ministry of
Education and Vocational Training for
endorsing the pilot introduction of the
programme, supporting the pilot phase
and for providing in-kind contribution
in form of expertise.
The pilot phase which was officially
implemented from mid-July 2008, had just
been concluded in 10 secondary schools
and three teachers training colleges
from the eastern zone (Dar es Salaam,
Morogoro and Coast regions), whereby the
teachers and tutors of Home Economics
and Biology had been trained in using
the Manual back in their classes as a
reference tool.
